Elote, Grilled Mexican Street Corn

Using one of August's seasonal and bountiful veggies, Sweetcorn. Say goodbye to boring salads and hello to this delicious addition to any BBQ or dinner table. Introducing grilled Mexican street corn - Elote.

  • Ingredients

    6 Ears of corn, cleaned & shucked
    3 Tbsp Mayonnaise
    3 Tbsp Sour Cream
    40 grams of Cotija cheese (or substitute for feta)
    Serve with chilli powder, coriander, & lime wedges
  • Method

    1.

    Grill the ears of corn on a medium-high heat. Remember to turn the corn often to prevent burning.

    2.

    Take the corn of the grill after 10 minutes or when charred

    3.

    In the meantime, mix the mayonnaise and sour cream

    4.

    Once, the corn is cooked, brush the outside with the sour cream and mayonnaise mixture. Then sprinkle with chilli powder, cheese and cilantro.

    5.

    Serve with a squeeze of lime.
